The maintenance of a cast iron frying pan begins with the first use, with the basting process. This is the process that creates a naturally non-stick patina:

Equipment:

  • Cast iron stove
  • Vegetable oil (rapeseed, sunflower, peanut, etc.)
  • Paper towel
  • Washing-up brush
  • Oven

Stages:

  1. Wash the pan. Remove the label and any manufacturing oil residue with hot soapy water. Scrub the surface of the pan thoroughly with a washing-up brush to remove any dirt or debris. Rinse thoroughly with clean water and dry the pan carefully with a paper towel.
  2. Apply a thin layer of oil. Pour a small amount of vegetable oil into the pan and spread it over the entire surface, including the sides and handle, using a paper towel. Make sure the pan is covered with an even layer of oil, but not too much.
  3. Heat the frying pan in the oven. Place the pan upside down on the rack of an oven preheated to 180°C. Leave to heat for about an hour. This will allow the oil to polymerise and set on the surface of the pan.
  4. Turn off the oven and leave the pan to cool. Once the oven has cooled, carefully remove the pan. The oil should have turned brown and the surface of the pan should be smooth to the touch.
  5. Repeat steps 2 to 4 if necessary. For best results, we recommend repeating steps 2 to 4 two or three times. This will create a thicker, longer-lasting patina.

  • Use a vegetable oil with a high smoke point, such as rapeseed, sunflower or peanut oil.
  • Do not use olive oil, as it tends to become sticky when heated.
  • Make sure the pan is completely dry before applying the oil.
  • Never wash the cast iron pan with soap after basting. Simply use hot water and a washing-up brush to remove any food residue.
  • Always dry the pan immediately after washing to prevent rusting.
  • The more you use your cast iron stove, the more the patina will develop and improve.

With the right culottes and regular maintenance, your cast iron frying pan will last for years and become your favourite kitchen utensil.

  • Generously oil the entire surface with a natural oil (sunflower, peanut...)
  • Leave to heat for 15-20 minutes to allow the oil to penetrate the pores of the cast iron.
